Ingredients

(Original recipe yields 2 servings)

  • 1 lb (450g) large shrimp, peeled and deveined
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 6 small flour or corn tortillas, warmed
  • 1 cup shredded purple cabbage
  • 1/2 cup diced avocado
  • 1/4 cup crumbled cotija cheese (or feta)
  • Lime wedges, for serving
  • Hot sauce or salsa (optional, for serving)

Directions

1. Prepare the Shrimp:

Pat the shrimp dry with paper towels and season with salt, pepper, smoked paprika, and chili powder.

2. Cook the Shrimp:

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, until pink and opaque. Remove the shrimp from the skillet and set aside.

3. Make the Garlic Butter Sauce:

In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for 30 seconds until fragrant. Stir in the lime juice and cilantro. Return the shrimp to the skillet and toss to coat in the garlic butter sauce.

4. Assemble the Tacos:

Warm the tortillas and fill them with the garlic butter shrimp. Top with shredded purple cabbage, diced avocado, and crumbled cotija cheese.

5. Serve:

Serve the tacos with lime wedges and hot sauce or salsa on the side for an extra kick.
